In order to have a systematic understanding of the nutritional value of Fenneropenaeus chinensis in the biological aquaculture mode integrating salt production and fish farming, the basic nutrient components( including water, crude protein, crude fat, ash, total sugar), amino acid composition in proteins, fatty acid composition, vitamins and inorganic elements in the muscle of Fenneropenaeus chinensis were determined to evaluate the nutritional value in this paper. The results showed that under the biological aquaculture mode, Fenneropenaeus chinensis is rich with high content of protein and complete range of amino acids (the constitutional rate of the essential amino acids was 39.03% of the total amino acids), which is in line with the ideal model recommended by FAO/WHO; the content of delicious amino acids was as high as 43.73%; the content of fat was low ; the contents of VB3 and VE were high; the contents of calcium, iron, zinc, magnesium, selenium and other essential mineral elements in human body ware rich and free of heavy metal pollution. In conclusion, the Fenneropenaeus chinensis in the biological aquaculture mode integrating salt production and fish farming is high quality seafood with high protein, high minerals and low fat.
